Title: King Alfred Cakes

Yield: 4 Servings
1 c Flour
1/4 c Sugar
1/2 ts Baking powder
1/4 ts Salt
1/2 ts Nutmeg
3 tb Butter; in small pieces
1/4 c Raisins
1/4 c Cut up dates, dried apricots
- or prunes
1 lg Egg
1/8 c Heavy whipping cream
1/8 c Orange juice
Set oven @ 425ºF/218ºC.
Mix all the dry ingredients in a large bowl.
Cut in the butter until it looks like crumbs.
Stir in the fruit.
In a small bowl, mix the egg, cream and orange juice.
Make a small well in the middle of the dry ingredients,
and pour the egg mixture into the well. Mix until all is
moist.
Turn out onto a floured surface, and knead the dough
gently. At this point you can either form the dough into
4 round cakes, or 12 biscuit shaped cakes, or form 3
round cakes, and cut into quarters to form scones. Bake
on a baking sheet (with cooking spray) for 8-10 minutes,
or until the cakes are lightly browned.
Serve warm with butter.
