Title: Clare's Crab Norfolk

Yield: 4 Servings
1/4 lb Unsalted butter
1 Lemon; zest & juice
1/4 ts Cayenne pepper
3/4 ts Old Bay Seasoning
Salt & pepper
1 lb Lump jumbo crabmeat
2 tb Minced fresh Italian
- flat-leaf parsley
Set oven @ 375ºF/190ºC.
Place butter, lemon zest and juice, cayenne pepper, Old
Bay Seasoning, salt and pepper in a shallow oval baking
dish large enough to accommodate the crabmeat.
Place in the oven and allow the butter to melt, about 3
minutes.
Remove the baking dish and stir to combine. Add crabmeat
and parsley and very gently fold the crabmeat into the
butter mixture, taking care not to break up the lumps.
Place the casserole back in the oven and allow to get
heated through and bubbly, about 15 minutes. Serve
immediately, either atop toast, or with French bread on
the side.
Makes 4 servings
