    Title: Spicy Chipotle Chicken Lentil Stew
    Categories: Poultry, Chilies, Beans, Vegetables, Herbs
    Yield: 8 Servings

    2 c Sliced carrots
    16 oz Skinned, boned chicken; in
    - 1" pieces
    1 c Brown lentils; rinsed
    1 c Chopped onion
    1 tb Fine chopped chipotles in
    - adobo
    1 tb Chilli spice mix
    2 ts Ground cumin
    1 1/2 ts Dried oregano; crushed
    2 cl Garlic; minced
    43 1/2 oz (3 cans) chicken broth
    14 1/2 oz Can Italian-style stewed
    - tomatoes; undrained, cut
    - up
    1 10 ounce can diced tomatoes
    - w/green chilies, undrained
    1/2 c Shredded Monterey Jack
    Avocado slices (opt)
    Plain yogurt (opt)

    In a 5 to 6 quart slow cooker layer carrots, chicken,
    lentils, onion, chipotle peppers, chili powder, cumin,
    oregano, and garlic. Add broth, stewed tomatoes, and
    tomatoes and green chiles.

    Cover and cook on low-heat setting for 10 hours or on
    high-heat setting for 5 hours.

    Serve topped with cheese and, if desired, avocado slices
    and yogurt.

    Makes: 8 servings
