    Title: Easy Chicken & Crab Gumbo

    Yield: 4 Servings

    1 c Chopped red or green bell
    - pepper
    1 c Chopped onion
    1 ts Bottled minced garlic
    2 tb Cooking oil
    1 tb All-purpose flour
    3 c Chicken broth
    14 1/2 oz Can diced tomatoes
    10 oz Package frozen cut okra

    1 1/2 c Sliced okra
    1/4 c Quick-cooking rice
    2 ts Cajun seasoning
    1 Bay leaf
    12 1/2 oz Can chunk-style chicken;
    - drained

    2 (5 oz ea) cans chunk-style
    - chicken; drained
    6 1/2 oz Can crabmeat; drained,
    - cartilage picked

    In a large saucepan cook red or green sweet pepper,
    onion, and garlic in hot oil until vegetables are tender.
    Stir in flour. Stir in chicken broth, undrained tomatoes,
    okra, rice, Cajun seasoning, and bay leaf. Bring mixture
    to boiling; reduce heat.

    Cover and simmer for 6 to 10 minutes or until okra is
    tender. Stir in chicken and crabmeat; heat through.
    Remove bay leaf. If you like, serve with crackers.
